Ingredients
- Cauliflower - 300 grams
- Shredded mozzarella cheese - 100 grams
- Cream cheese - 50 grams
- Egg - 1 large
- Soy sauce - 1 tablespoon
- Avocado - 1 medium, sliced
- Cucumber - 1 small, thinly sliced
- Radish - 4, thinly sliced
- Smoked salmon - 100 grams
- Wasabi - to taste
- Pickled ginger - for serving
- Sesame seeds - 1 tablespoon
Steps
- Preheat the oven to 220°C (428°F).
- Grate the cauliflower using a box grater or food processor until it resembles rice.
- Steam the grated cauliflower for about 5 minutes, then let it cool slightly.
- In a mixing bowl, combine the steamed cauliflower, shredded mozzarella, cream cheese, egg, and soy sauce. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, forming a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20-25 minutes until golden brown and firm.
- Remove the crust from the oven and let it cool for a few minutes.
- Spread a thin layer of cream cheese on top of the crust.
- Layer the smoked salmon, avocado, cucumber, and radish slices on top of the cream cheese.
- Sprinkle sesame seeds over the top and add wasabi to taste.
- Slice into wedges and serve immediately with pickled ginger on the side.
