Ingredients

  • Sushi rice - 150 grams
  • Water - 200 milliliters
  • Rice vinegar - 30 milliliters
  • Sugar - 10 grams
  • Salt - 5 grams
  • Nori sheets - 2 sheets
  • Fresh tuna (sashimi grade) - 100 grams
  • Fresh salmon (sashimi grade) - 100 grams
  • Shrimp (cooked) - 100 grams
  • Avocado - 1 medium, sliced
  • Cucumber - 1 small, julienned
  • Pickled ginger - for serving
  • Wasabi - for serving
  • Soy sauce (gluten-free) - for serving

Steps

  1. Rinse the sushi rice under cold water until the water runs clear. Drain and combine with 200ml of water in a pot.
  2. Bring the pot to a boil, then reduce the heat to low and cover. Cook for 18 minutes, then remove from heat and let it sit covered for an additional 10 minutes.
  3. In a small saucepan, combine rice vinegar, sugar, and salt over low heat until dissolved. Allow to cool.
  4. Once the rice is done, transfer it to a large bowl and fold in the vinegar mixture gently, taking care not to mash the rice.
  5. Let the seasoned rice cool to room temperature.
  6. While the rice cools, prepare the seafood: slice the tuna and salmon into thin sashimi slices, and set aside.
  7. For the sushi rolls, place a nori sheet shiny side down on a bamboo mat. Wet your hands with water and spread a thin layer of sushi rice over the nori, leaving a 2cm border at the top.
  8. Arrange slices of tuna, salmon, avocado, and cucumber horizontally across the rice.
  9. Roll the sushi tightly from the bottom using the mat, pressing gently to seal. Repeat with the second nori sheet.
  10. Slice the rolls into bite-sized pieces with a sharp knife. Arrange the sushi on a platter with shrimp, additional sashimi, pickled ginger, wasabi, and gluten-free soy sauce.
