Ingredients

  • Japanese short-grain rice - 1 cup
  • Water - 1 1/4 cups
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Sesame oil - 1 teaspoon
  • Nori sheets - 2 (for serving)
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Avocado - 1/2, sliced
  • Pickled ginger - for garnish
  • Wasabi - for serving

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, prepare the sushi vinegar mixture by combining rice vinegar, sugar, and salt in a small bowl. Stir until the sugar and salt dissolve.
  4. Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes.
  5. Transfer the rice to a large bowl and drizzle the sushi vinegar mixture over it. Gently fold the rice with a wooden spatula to combine, being careful not to mash the grains.
  6. Let the seasoned rice cool to room temperature.
  7. To serve, place a portion of sushi gohan on a plate, top with julienned cucumber, carrot, and avocado slices. Serve with nori sheets, pickled ginger, and wasabi on the side.
