Ingredients

  • Sushi rice - 150g
  • Water - 200ml
  • Rice vinegar - 30ml
  • Sugar - 10g
  • Salt - 5g
  • Nori sheets - 2
  • Cooked shrimp - 100g
  • Sliced avocado - 1
  • Cucumber - 50g
  • Wasabi - to taste
  • Soy sauce (gluten-free) - for serving
  • Sesame seeds - 1 tbsp
  • Pickled ginger - for garnish

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak for 30 minutes.
  2. Drain the rice and combine it with 200ml of water in a pot. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
  3. Remove the pot from heat and let it sit, covered, for an additional 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice, then let it cool slightly.
  5. Once cooled, divide the rice into two equal portions and form each portion into a round patty about 1.5 cm thick.
  6. Place a nori sheet on a clean surface and place one rice patty on top. Layer with shrimp, avocado, cucumber slices, and a small amount of wasabi.
  7. Top with another rice patty and carefully wrap the nori around the sides to form a burger shape. Repeat with the second burger.
  8. Sprinkle sesame seeds on top of the nori and serve with gluten-free soy sauce and pickled ginger.
