  • Tofu, firm, cubed - 100 grams
  • Soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Dashi broth - 500 ml
  • Sesame oil - 1 tablespoon

Steps

  1. Cook the udon noodles according to the package instructions, then drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat.
  3. Add the sliced beef and cook until browned, about 3-4 minutes.
  4. Stir in the shiitake mushrooms, napa cabbage, and green onions, cooking for another 2-3 minutes until the vegetables begin to soften.
  5. Pour in the dashi broth, soy sauce, mirin, and sugar, then bring the mixture to a simmer.
  6. Add the cubed tofu and simmer for an additional 5 minutes to heat through.
  7. Finally, add the cooked udon noodles to the pot, stirring gently to combine and heat the noodles for 2 minutes.
  8. Serve hot, garnished with extra green onions if desired.
