Ingredients

  • beef sirloin - 200 grams, thinly sliced
  • tofu - 150 grams, firm, cut into cubes
  • shirataki noodles - 100 grams, rinsed and drained
  • shiitake mushrooms - 100 grams, sliced
  • napa cabbage - 150 grams, chopped
  • green onions - 2, cut into 5 cm lengths
  • carrot - 1 medium, thinly sliced
  • soy sauce - 60 ml
  • mirin - 30 ml
  • sugar - 1 tablespoon
  • dashi stock - 500 ml
  • sesame oil - 1 tablespoon

Steps

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the sliced beef and cook until browned, about 2-3 minutes.
  3. Add the shiitake mushrooms, carrot, and napa cabbage to the pot, stirring for another 2-3 minutes.
  4. Pour in the dashi stock, soy sauce, mirin, and sugar. Bring to a simmer.
  5. Add the tofu and shirataki noodles, and let the pot simmer for 5-7 minutes until the vegetables are tender.
  6. Stir in the green onions, and adjust seasoning to taste.
  7. Serve hot directly from the pot, accompanied by rice if desired.
