- beef sirloin - 200 grams, thinly sliced
- tofu - 150 grams, firm, cut into cubes
- shirataki noodles - 100 grams, rinsed and drained
- shiitake mushrooms - 100 grams, sliced
- napa cabbage - 150 grams, chopped
- green onions - 2, cut into 5 cm lengths
- carrot - 1 medium, thinly sliced
- soy sauce - 60 ml
- mirin - 30 ml
- sugar - 1 tablespoon
- dashi stock - 500 ml
- sesame oil - 1 tablespoon
Steps
- In a large pot, heat the sesame oil over medium heat.
- Add the sliced beef and cook until browned, about 2-3 minutes.
- Add the shiitake mushrooms, carrot, and napa cabbage to the pot, stirring for another 2-3 minutes.
- Pour in the dashi stock, soy sauce, mirin, and sugar. Bring to a simmer.
- Add the tofu and shirataki noodles, and let the pot simmer for 5-7 minutes until the vegetables are tender.
- Stir in the green onions, and adjust seasoning to taste.
- Serve hot directly from the pot, accompanied by rice if desired.
