  • Shirakiku udon noodles - 150 grams
  • Soy sauce - 4 tablespoons
  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Dashi stock - 500 ml
  • Sesame oil - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat until shimmering.
  2. Add the sliced beef sirloin to the pot and cook until browned, about 2-3 minutes.
  3. Pour in the dashi stock, soy sauce, mirin, and sugar. Stir well to combine.
  4. Bring the mixture to a gentle simmer and add the chopped Napa cabbage, shiitake mushrooms, and cubed tofu.
  5. Allow the ingredients to simmer for about 5-7 minutes until the vegetables are tender.
  6. Add the udon noodles and green onions to the pot and cook for an additional 3-4 minutes until the noodles are heated through.
