Ingredients

  • Japanese short-grain rice - 150 grams
  • Water - 200 ml
  • Sujiko (salmon roe) - 100 grams
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Green onions - 2 stalks
  • Sesame seeds - 1 teaspoon
  • Nori (seaweed) - 1 sheet

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a rice cooker or pot, combine the soaked rice and water, and cook according to the rice cooker's instructions or bring to a boil, then simmer for 15 minutes until water is absorbed.
  3. While the rice is cooking, prepare the marinade for the sujiko by mixing the soy sauce and mirin in a small bowl.
  4. Once cooked, let the rice sit covered for 10 minutes to steam and fluff up.
  5. Gently mix the sujiko with the marinade, ensuring the roe is well coated.
  6. Chop the green onions finely and set aside.
  7. Fluff the rice with a fork and divide it into two bowls.
  8. Top each bowl of rice with the marinated sujiko, sprinkle with sesame seeds, and garnish with chopped green onions.
  9. Cut the nori sheet into thin strips and sprinkle over the top before serving.
