Ingredients
- Udon noodles - 200 grams
- Fresh spinach - 150 grams
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable broth - 250 ml
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Crushed red pepper flakes - 1/2 teaspoon (optional)
- Salt - to taste
Steps
- Bring a pot of water to a boil and cook the udon noodles according to package instructions, usually about 8-10 minutes. Drain and set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in the vegetable broth and soy sauce, stirring to combine. Let it simmer for 2 minutes.
- Add the cooked udon noodles to the skillet, tossing everything together until well coated in the sauce. If desired, add crushed red pepper flakes for some heat.
- Remove from heat and top with chopped green onions and sesame seeds. Serve immediately.
