  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Mushrooms - 100 grams, sliced
  • Tofu - 100 grams, cubed
  • Sesame seeds - 1 tablespoon, toasted
  • Chili flakes - to taste

Steps

  1. In a pot, heat sesame oil over medium heat and sauté minced garlic and grated ginger until fragrant, about 1 minute.
  2. Add sliced mushrooms and julienned carrot to the pot, cooking for 5-7 minutes until softened.
  3. Pour in the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
  4. Add the fresh spinach and cubed tofu, cooking for an additional 3-5 minutes until the spinach is wilted.
  5. Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.
  6. Serve the ramen noodles in bowls, ladle the broth and vegetables over them, and garnish with chopped green onions, toasted sesame seeds, and chili flakes to taste.
