Ingredients

  • Fresh spinach - 200 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Bonito flakes - 10 grams
  • Toasted sesame seeds - 1 tablespoon
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a pot.
  2. Once boiling, add the fresh spinach and blanch for 1-2 minutes until wilted.
  3. Remove the spinach and immediately plunge it into a bowl of ice water to stop the cooking process.
  4. Drain the spinach and gently squeeze out excess water, then chop into bite-sized pieces.
  5. In a mixing bowl, combine soy sauce, mirin, and sesame oil.
  6. Add the chopped spinach to the soy sauce mixture and toss gently to coat.
  7. Let the spinach marinate for at least 5 minutes.
  8. Serve the spinach ohitashi in small bowls, garnished with bonito flakes and toasted sesame seeds.
