Ingredients

  • Fresh spinach - 200 grams
  • Sesame seeds - 2 tablespoons
  • Firm tofu - 150 grams
  • Panko breadcrumbs - 50 grams
  • Soy sauce - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onion - 1, finely chopped
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Burger buns - 2
  • Mayonnaise - 2 tablespoons
  • Lettuce leaves - 2

Steps

  1. In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 3-4 minutes. Set aside.
  2. Blanch the spinach in boiling water for about 1 minute, then drain and cool in ice water. Squeeze out excess water and chop finely.
  3. In a mixing bowl, crumble the tofu and add the chopped spinach, toasted sesame seeds, panko breadcrumbs, soy sauce, minced garlic, grated ginger, and chopped green onion. Mix until well combined.
  4. Form the mixture into two patties, season with salt and pepper to taste.
  5. Heat the vegetable oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
  6. While the patties are cooking, lightly toast the burger buns in the same skillet, cut side down, until golden.
  7. Assemble the burgers by spreading mayonnaise on both halves of the buns, placing a lettuce leaf on the bottom half, followed by the spinach goma patty. Top with the other half of the bun.
