- Fresh spinach - 200 grams
- Sesame seeds - 2 tablespoons
- Firm tofu - 150 grams
- Panko breadcrumbs - 50 grams
- Soy sauce - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Green onion - 1, finely chopped
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Burger buns - 2
- Mayonnaise - 2 tablespoons
- Lettuce leaves - 2
Steps
- In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 3-4 minutes. Set aside.
- Blanch the spinach in boiling water for about 1 minute, then drain and cool in ice water. Squeeze out excess water and chop finely.
- In a mixing bowl, crumble the tofu and add the chopped spinach, toasted sesame seeds, panko breadcrumbs, soy sauce, minced garlic, grated ginger, and chopped green onion. Mix until well combined.
- Form the mixture into two patties, season with salt and pepper to taste.
- Heat the vegetable oil in the skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and heated through.
- While the patties are cooking, lightly toast the burger buns in the same skillet, cut side down, until golden.
- Assemble the burgers by spreading mayonnaise on both halves of the buns, placing a lettuce leaf on the bottom half, followed by the spinach goma patty. Top with the other half of the bun.
