- Fresh spinach - 200 grams

- Salt - a pinch
Steps
- Bring a pot of water to a boil and add a pinch of salt.
- Once boiling, add the fresh spinach and blanch for about 1-2 minutes until bright green and tender.
- Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Let it cool for a few minutes.
- Squeeze the spinach to remove excess water and chop it into bite-sized pieces.
- In a dry skillet over medium heat, toast the sesame seeds until golden brown, about 2-3 minutes, stirring occasionally to prevent burning.
- In a small bowl, mix the toasted sesame seeds (reserve a teaspoon for garnish), soy sauce, mirin, sesame oil, and sugar substitute until combined.
- Combine the chopped spinach with the sesame dressing in a mixing bowl and toss until evenly coated.
- Transfer to a serving dish, sprinkle with reserved sesame seeds, and serve immediately or chilled.
