Ingredients

  • Sushi rice - 200 grams
  • Water - 250 ml
  • Rice vinegar - 30 ml
  • Sugar - 1 tablespoon
  • Salt - 1 teaspoon
  • Fresh sushi-grade tuna - 150 grams, diced
  • Sriracha sauce - 2 tablespoons
  • Mayonnaise (vegan) - 2 tablespoons
  • Nori sheets - 2, cut into strips
  • Green onions - 2, finely chopped
  • Sesame oil - 1 tablespoon
  • Cilantro - a handful, chopped
  • Lime - 1, juiced
  • Pepper - to taste

Steps

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice with 250 ml of water in a rice cooker or pot according to package instructions.
  2. Once cooked, let the rice cool for about 10 minutes, then mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the rice and let it cool completely.
  3. Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
  4. Spread the cooled sushi rice onto the prepared baking sheet, forming a round pizza shape, about 1 cm thick. Bake for 15-20 minutes until the edges are crispy and golden.
  5. In a bowl, combine diced tuna, sriracha sauce, vegan mayonnaise, lime juice, sesame oil, and pepper to taste. Mix well and set aside.
  6. Once the rice base is baked, remove it from the oven and let it cool for a few minutes.
  7. Top the crispy rice base with the spicy tuna mixture, spreading it evenly.
  8. Garnish with nori strips, chopped green onions, and cilantro before slicing into wedges.
