- Sushi rice - 200 grams
- Water - 250 ml
- Rice vinegar - 30 ml
- Sugar - 1 tablespoon
- Salt - 1 teaspoon
- Fresh sushi-grade tuna - 150 grams, diced
- Sriracha sauce - 2 tablespoons
- Mayonnaise (vegan) - 2 tablespoons
- Nori sheets - 2, cut into strips
- Green onions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Cilantro - a handful, chopped
- Lime - 1, juiced
- Pepper - to taste
Steps
- Rinse the sushi rice under cold water until the water runs clear. Cook the rice with 250 ml of water in a rice cooker or pot according to package instructions.
- Once cooked, let the rice cool for about 10 minutes, then mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the rice and let it cool completely.
- Preheat the oven to 220°C (428°F). Line a baking sheet with parchment paper.
- Spread the cooled sushi rice onto the prepared baking sheet, forming a round pizza shape, about 1 cm thick. Bake for 15-20 minutes until the edges are crispy and golden.
- In a bowl, combine diced tuna, sriracha sauce, vegan mayonnaise, lime juice, sesame oil, and pepper to taste. Mix well and set aside.
- Once the rice base is baked, remove it from the oven and let it cool for a few minutes.
- Top the crispy rice base with the spicy tuna mixture, spreading it evenly.
- Garnish with nori strips, chopped green onions, and cilantro before slicing into wedges.
