Ingredients

  • fresh sushi-grade tuna - 200 grams
  • panko breadcrumbs - 50 grams
  • green onion - 2 stalks, finely chopped
  • soy sauce - 1 tablespoon
  • sriracha - 1 tablespoon
  • sesame oil - 1 teaspoon
  • egg - 1 large
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • burger buns - 2
  • wasabi paste - 1 teaspoon
  • mayonnaise - 2 tablespoons
  • arugula - 50 grams
  • sliced cucumber - 50 grams

Steps

  1. Finely chop the sushi-grade tuna and place it in a mixing bowl.
  2. Add the panko breadcrumbs, chopped green onion, soy sauce, sriracha, sesame oil, egg, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and add a small amount of oil. Once hot, cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  5. While the burgers are cooking, prepare the wasabi mayo by combining wasabi paste and mayonnaise in a small bowl.
  6. Toast the burger buns in the same skillet until lightly golden.
  7. Assemble the burgers by spreading wasabi mayo on the bottom bun, adding the tuna patty, a handful of arugula, and sliced cucumber. Top with the other half of the bun.
