Ingredients
- Sushi rice - 150 grams
- Water - 200 milliliters
- Rice vinegar - 30 milliliters
- Sugar - 10 grams
- Salt - 5 grams
- Fresh salmon fillet - 200 grams
- Soy sauce - 15 milliliters
- Sriracha sauce - 10 milliliters
- Sesame oil - 5 milliliters
- Green onions - 2 stalks, chopped
- Nori sheets - 2 sheets, cut into small pieces
- Avocado - 1, sliced
- Cucumber - 1, thinly sliced
- Pickled ginger - for garnish
- Sesame seeds - for garnish
Steps
- Rinse the sushi rice under cold water until the water runs clear, then drain.
- In a saucepan, combine the rinsed rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Once cooked, remove from heat and let it sit covered for an additional 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then gently fold this mixture into the cooked rice to season it. Allow to cool slightly.
- While the rice cools, prepare the spicy salmon by cutting the salmon fillet into small cubes and marinating it in soy sauce, Sriracha, and sesame oil for 10 minutes.
- Preheat the oven to 200°C (390°F).
- On a baking sheet, spread the cooled sushi rice into two 10cm (4-inch) round pizza shapes, pressing firmly to form a base.
- Bake the rice bases in the oven for 15 minutes or until they become lightly golden and crispy.
- Remove the rice bases from the oven and let them cool for a couple of minutes.
- Top each rice base with the marinated salmon, avocado slices, cucumber, chopped green onions, and nori pieces.
- Return to the oven for an additional 5 minutes to warm the toppings.
- Remove from the oven, garnish with pickled ginger and sesame seeds, and serve immediately.
