Ingredients

  • Sushi rice - 150 grams
  • Water - 200 milliliters
  • Rice vinegar - 30 milliliters
  • Sugar - 10 grams
  • Salt - 5 grams
  • Fresh salmon fillet - 200 grams
  • Soy sauce - 15 milliliters
  • Sriracha sauce - 10 milliliters
  • Sesame oil - 5 milliliters
  • Green onions - 2 stalks, chopped
  • Nori sheets - 2 sheets, cut into small pieces
  • Avocado - 1, sliced
  • Cucumber - 1, thinly sliced
  • Pickled ginger - for garnish
  • Sesame seeds - for garnish

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the rinsed rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. Once cooked, remove from heat and let it sit covered for an additional 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then gently fold this mixture into the cooked rice to season it. Allow to cool slightly.
  5. While the rice cools, prepare the spicy salmon by cutting the salmon fillet into small cubes and marinating it in soy sauce, Sriracha, and sesame oil for 10 minutes.
  6. Preheat the oven to 200°C (390°F).
  7. On a baking sheet, spread the cooled sushi rice into two 10cm (4-inch) round pizza shapes, pressing firmly to form a base.
  8. Bake the rice bases in the oven for 15 minutes or until they become lightly golden and crispy.
  9. Remove the rice bases from the oven and let them cool for a couple of minutes.
  10. Top each rice base with the marinated salmon, avocado slices, cucumber, chopped green onions, and nori pieces.
  11. Return to the oven for an additional 5 minutes to warm the toppings.
  12. Remove from the oven, garnish with pickled ginger and sesame seeds, and serve immediately.
