Spicy Salmon Burger

Ingredients
- Fresh salmon fillets - 250 grams
- Cauliflower - 200 grams
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Sriracha sauce - 1 tablespoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almond flour - 2 tablespoons
- Lettuce leaves - for serving
- Avocado - 1 small, sliced
- Pickled ginger - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Steam or microwave the cauliflower florets until tender, about 5-7 minutes. Drain and let cool slightly.
- In a food processor, combine the cooked cauliflower, fresh salmon fillets, egg, green onion, garlic, Sriracha, soy sauce, sesame oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
- Transfer the mixture to a bowl and stir in the almond flour. Mix until just combined.
- Form the mixture into two patties, about 1.5 cm thick.
- Heat a non-stick skillet over medium heat and add a small amount of oil. Cook the patties for 3-4 minutes on each side until golden brown and cooked through.
- Transfer the patties to a baking sheet and place them in the preheated oven for an additional 5 minutes to ensure they're cooked thoroughly.
- To serve, place each patty on a lettuce leaf, top with avocado slices, and garnish with pickled ginger.
