Ingredients

  • Frozen edamame - 150 grams, shelled
  • Cooked quinoa - 100 grams
  • Rolled oats - 50 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Sriracha - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Ground flaxseed - 1 tablespoon
  • Water - 3 tablespoons
  • Olive oil - 1 tablespoon (for cooking)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2, whole grain
  • Avocado - 1 small, sliced
  • Lettuce leaves - 2

Steps

  1. In a small bowl, combine the ground flaxseed with water and let it sit for 5 minutes to thicken.
  2. In a food processor, add the shelled edamame, cooked quinoa, rolled oats, green onion, garlic, sriracha, soy sauce, salt, and pepper. Pulse until the mixture is well combined but still chunky.
  3. Add the flaxseed mixture to the food processor and pulse again until everything is mixed well.
  4. Shape the mixture into two patties, about 1.5 cm thick.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
  6. Toast the burger buns lightly in the same skillet, if desired.
  7. Assemble the burgers by placing a patty on each bun, topping with sliced avocado and lettuce leaves. Serve immediately.
