- Frozen edamame - 150 grams, shelled
- Cooked quinoa - 100 grams
- Rolled oats - 50 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Sriracha - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ground flaxseed - 1 tablespoon
- Water - 3 tablespoons
- Olive oil - 1 tablespoon (for cooking)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2, whole grain
- Avocado - 1 small, sliced
- Lettuce leaves - 2
Steps
- In a small bowl, combine the ground flaxseed with water and let it sit for 5 minutes to thicken.
- In a food processor, add the shelled edamame, cooked quinoa, rolled oats, green onion, garlic, sriracha, soy sauce, salt, and pepper. Pulse until the mixture is well combined but still chunky.
- Add the flaxseed mixture to the food processor and pulse again until everything is mixed well.
- Shape the mixture into two patties, about 1.5 cm thick.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until golden brown and heated through.
- Toast the burger buns lightly in the same skillet, if desired.
- Assemble the burgers by placing a patty on each bun, topping with sliced avocado and lettuce leaves. Serve immediately.
