Steps
- In a small saucepan, combine 100 ml of soy milk and the agar-agar powder. Let it sit for 5 minutes to hydrate.
- After 5 minutes, place the saucepan over medium heat and stir until the agar-agar is completely dissolved, about 3-5 minutes.
- In a separate bowl, whisk together the cornstarch, maple syrup, vanilla extract, and a pinch of salt with the remaining soy milk (300 ml).
- Once the agar-agar mixture is ready, gradually add it to the soy milk mixture while continuously whisking to avoid lumps.
- Pour the combined mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens, about 7-10 minutes.
- Remove the saucepan from heat and pour the pudding mixture into two serving bowls or molds.
- Allow the pudding to cool at room temperature for about 10 minutes, then refrigerate for at least 2 hours until set.
- Serve chilled, optionally garnished with fresh fruit or a drizzle of additional maple syrup.
