Ingredients

  • Soba noodles - 150 grams
  • Fresh spinach - 200 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Sesame seeds - 1 tablespoon
  • Green onion - 2, finely chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 4-5 minutes, until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large pan, heat sesame oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the pan and sauté for 2-3 minutes until wilted. Season with salt and black pepper to taste.
  4. In a bowl, mix the cooked soba noodles with the sautéed spinach, soy sauce, rice vinegar, and half of the chopped green onions. Toss well to combine.
  5. Serve the soba with spinach in bowls, garnished with the remaining green onions and a sprinkle of sesame seeds.
