Ingredients
- Soba noodles - 150 grams
- Fresh spinach - 200 grams
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Sesame seeds - 1 tablespoon
- Green onion - 2, finely chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 4-5 minutes, until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large pan, heat sesame oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the pan and sauté for 2-3 minutes until wilted. Season with salt and black pepper to taste.
- In a bowl, mix the cooked soba noodles with the sautéed spinach, soy sauce, rice vinegar, and half of the chopped green onions. Toss well to combine.
- Serve the soba with spinach in bowls, garnished with the remaining green onions and a sprinkle of sesame seeds.
