  • Honey - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Ginger (grated) - 1 teaspoon
  • Green onions (sliced) - 2 stalks
  • Sesame seeds (toasted) - 1 tablespoon
  • Cucumber (julienned) - 1 small
  • Carrot (julienned) - 1 small
  • Water - 2 liters

Steps

  1. Bring 2 liters of water to a boil in a large pot.
  2. Add the soba noodles to the boiling water and cook according to package instructions (usually about 4-6 minutes) until al dente.
  3. While the noodles are cooking, in a bowl, whisk together soy sauce, sesame oil, rice vinegar, chili paste, honey, minced garlic, and grated ginger to create the spicy sauce.
  4. Once the soba noodles are cooked, drain them and rinse under cold water to stop the cooking process.
