  • Soba noodles - 150 grams
  • Shrimp, peeled and deveined - 200 grams

  • Green onions, sliced - 2 stalks
  • Carrot, julienned - 1 medium
  • Bell pepper, sliced - 1 medium
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the soba noodles according to the package instructions, usually about 4-5 minutes, then drain and rinse under cold water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque.
  4. Stir in the julienned carrot and sliced bell pepper, cooking for another 2-3 minutes until the vegetables are tender-crisp.
  5. Add the cooked soba noodles to the skillet along with the soy sauce, sesame oil, lime juice, and half of the green onions. Toss everything together until well combined and heated through.
  6. Season with salt and pepper to taste, and sprinkle sesame seeds and the remaining green onions on top before serving.
