  • Soba noodles - 100 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey or maple syrup - 1 teaspoon
  • Toasted sesame seeds - 1 tablespoon
  • Green onion - 1 stalk, finely chopped
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Salt - to taste

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 6-8 minutes until al dente.
  2. While the noodles are cooking, prepare the sesame dressing by whisking together the sesame oil, soy sauce, rice vinegar, honey (or maple syrup), and a pinch of salt in a bowl.
  3. Once the soba noodles are cooked, drain them and rinse under cold water to stop the cooking process and cool them down.
  4. In a large mixing bowl, combine the cooled soba noodles with the sesame dressing, ensuring the noodles are well-coated.
  5. Add the julienned cucumber, carrot, and chopped green onion to the bowl and toss gently to combine.
  6. Sprinkle toasted sesame seeds on top as a garnish before serving.
