Ingredients

  • Soba noodles - 150 grams
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Garlic - 1 clove, minced
  • Green onions - 2, sliced
  • Sesame seeds - 2 tablespoons, toasted
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned
  • Salt - to taste

Steps

  1. Bring a large pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 4-6 minutes, until tender.
  2. While the noodles are cooking, prepare the dressing. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, and minced garlic.
  3. Once the noodles are cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  4. In a large bowl, combine the cooked soba noodles with the dressing, ensuring the noodles are well coated.
  5. Add the sliced green onions, toasted sesame seeds, julienned cucumber, and carrot to the bowl. Toss gently to combine all ingredients.
