Ingredients

  • Soba noodles - 150 grams
  • Dried nori seaweed - 10 grams
  • Soy sauce - 30 ml
  • Sesame oil - 10 ml
  • Green onions - 2 stalks, finely chopped
  • Sesame seeds - 1 tablespoon
  • Miso paste - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Water - 1 liter

Steps

  1. Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes) until tender.
  2. While the noodles cook, prepare the sauce by combining soy sauce, sesame oil, miso paste, grated ginger, and minced garlic in a small bowl. Mix until smooth.
  3. Once the noodles are cooked, drain them and rinse under cold water to stop the cooking process and remove excess starch.
  4. In a large mixing bowl, combine the cooled soba noodles with the sauce, chopped green onions, and torn pieces of nori seaweed. Toss gently until everything is well coated.
  5. Serve the soba in bowls, garnishing with sesame seeds and extra nori if desired.
