- Soba noodles - 150 grams
- Dried nori seaweed - 10 grams
- Soy sauce - 30 ml
- Sesame oil - 10 ml
- Green onions - 2 stalks, finely chopped
- Sesame seeds - 1 tablespoon
- Miso paste - 1 tablespoon
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Water - 1 liter
Steps
- Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions (usually about 4-5 minutes) until tender.
- While the noodles cook, prepare the sauce by combining soy sauce, sesame oil, miso paste, grated ginger, and minced garlic in a small bowl. Mix until smooth.
- Once the noodles are cooked, drain them and rinse under cold water to stop the cooking process and remove excess starch.
- In a large mixing bowl, combine the cooled soba noodles with the sauce, chopped green onions, and torn pieces of nori seaweed. Toss gently until everything is well coated.
- Serve the soba in bowls, garnishing with sesame seeds and extra nori if desired.
