  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Spring onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams
  • Water - 1 liter
  • Toasted sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.
  2. In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
  3. Add sliced pork tenderloin to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. Stir in soy sauce and mirin, mixing well to coat the pork. Add julienned carrot and snow peas, cooking for an additional 2-3 minutes until the vegetables are tender-crisp.
  5. Add the cooked soba noodles to the skillet, tossing everything together to combine and heat through for about 2 minutes.
  6. Serve hot, garnished with chopped spring onions and toasted sesame seeds.
