- Snow peas - 100 grams
- Water - 1 liter
- Toasted sesame seeds - 1 tablespoon (for garnish)
Steps
- Bring 1 liter of water to a boil in a pot. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes. Once cooked, drain and rinse under cold water to stop the cooking process.
- In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.
- Add sliced pork tenderloin to the skillet, cooking until browned and cooked through, about 5-7 minutes.
- Stir in soy sauce and mirin, mixing well to coat the pork. Add julienned carrot and snow peas, cooking for an additional 2-3 minutes until the vegetables are tender-crisp.
- Add the cooked soba noodles to the skillet, tossing everything together to combine and heat through for about 2 minutes.
- Serve hot, garnished with chopped spring onions and toasted sesame seeds.
