Ingredients

  • Enoki mushrooms - 100 grams, trimmed
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 200 milliliters
  • Green onions - 2 stalks, chopped
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water. Set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the sliced shiitake mushrooms and enoki mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender.
  4. Pour in the vegetable broth and soy sauce, and bring to a simmer. Cook for another 3-4 minutes.
  5. Stir in the spinach and cooked soba noodles, tossing everything together until the spinach wilts and the noodles are heated through, about 2-3 minutes.
  6. Remove from heat and garnish with chopped green onions and toasted sesame seeds before serving.
