- Shiitake mushrooms - 150 grams, sliced
- Enoki mushrooms - 100 grams, trimmed
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable broth - 200 milliliters
- Green onions - 2 stalks, chopped
- Spinach - 100 grams
- Sesame seeds - 1 tablespoon, toasted
Steps
- Cook the soba noodles according to package instructions, then drain and rinse under cold water. Set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add the sliced shiitake mushrooms and enoki mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender.
- Pour in the vegetable broth and soy sauce, and bring to a simmer. Cook for another 3-4 minutes.
- Stir in the spinach and cooked soba noodles, tossing everything together until the spinach wilts and the noodles are heated through, about 2-3 minutes.
- Remove from heat and garnish with chopped green onions and toasted sesame seeds before serving.
