Ingredients

  • Soba noodles - 150 grams
  • White fish fillets (such as cod or tilapia) - 200 grams
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Mixed salad greens - 100 grams
  • Lemon wedges - 2 for serving

Steps

  1. Cook the soba noodles according to package instructions, usually about 4-5 minutes. Drain and rinse under cold water to stop the cooking.
  2. In a small bowl, mix soy sauce, mirin, sesame oil, garlic, and ginger to create a marinade.
  3. Place the fish fillets in a shallow dish and pour the marinade over them. Let them marinate for about 10-15 minutes.
  4. Preheat a grill or grill pan over medium heat. Remove the fish from the marinade and grill for 3-4 minutes on each side, or until cooked through and flaky.
  5. In a large bowl, combine the cooked soba noodles with the mixed salad greens and chopped green onions. Drizzle with any remaining marinade and toss to combine.
  6. Divide the soba and salad mixture between two plates, top each with a grilled fish fillet, and sprinkle with toasted sesame seeds.
  7. Serve with lemon wedges on the side.
