Ingredients

  • Soba noodles - 150 grams
  • Chicken breast - 200 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sesame oil - 10 ml
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Cucumber - 1, julienned
  • Carrot - 1, julienned
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix soy sauce, mirin, sesame oil, minced garlic, and grated ginger to create the marinade.
  2. Add the chicken breast to the marinade, ensuring it is well-coated. Let it marinate for at least 15 minutes.
  3. While the chicken is marinating, cook the soba noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.
  4. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked.
  5. Once cooked, let the chicken rest for a few minutes before slicing it thinly.
  6. In a large bowl, combine the soba noodles, sliced grilled chicken, julienned cucumber, and carrot.
  7. Drizzle with remaining marinade and toss gently to combine.
  8. Serve the dish topped with sliced green onions and a sprinkle of sesame seeds.
