- soba noodles - 150 grams
- shelled edamame - 100 grams
- soy sauce - 2 tablespoons
- sesame oil - 1 tablespoon
- rice vinegar - 1 tablespoon
- honey - 1 teaspoon
- garlic - 1 clove, minced
- green onions - 2, sliced
- sesame seeds - 1 tablespoon
- salt - to taste
- pepper - to taste
Steps
- Bring a large pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 5-7 minutes until al dente.
- In the last 3 minutes of cooking the noodles, add the shelled edamame to the pot.
- Once the noodles and edamame are cooked, drain and rinse under cold water to stop the cooking process. Set aside.
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced garlic, salt, and pepper to create the dressing.
- In a large bowl, combine the soba noodles and edamame, then pour the dressing over them. Toss gently to combine.
- Serve the soba with edamame in bowls, garnished with sliced green onions and sesame seeds.
