Ingredients

  • soba noodles - 150 grams
  • shelled edamame - 100 grams
  • soy sauce - 2 tablespoons
  • sesame oil - 1 tablespoon
  • rice vinegar - 1 tablespoon
  • honey - 1 teaspoon
  • garlic - 1 clove, minced
  • green onions - 2, sliced
  • sesame seeds - 1 tablespoon
  • salt - to taste
  • pepper - to taste

Steps

  1. Bring a large pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 5-7 minutes until al dente.
  2. In the last 3 minutes of cooking the noodles, add the shelled edamame to the pot.
  3. Once the noodles and edamame are cooked, drain and rinse under cold water to stop the cooking process. Set aside.
  4. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced garlic, salt, and pepper to create the dressing.
  5. In a large bowl, combine the soba noodles and edamame, then pour the dressing over them. Toss gently to combine.
  6. Serve the soba with edamame in bowls, garnished with sliced green onions and sesame seeds.
