Ingredients

  • Soba noodles - 150 grams
  • Water - 1 liter
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Dashi stock - 240 ml
  • Scallions - 2, finely chopped
  • Wasabi - 1 teaspoon (optional)
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Bring 1 liter of water to a boil in a pot.
  2. Add 150 grams of soba noodles to the boiling water and cook according to package instructions (usually about 5-6 minutes).
  3. While the noodles are cooking, prepare the dipping sauce by combining 60 ml of soy sauce, 30 ml of mirin, and 240 ml of dashi stock in a small saucepan.
  4. Heat the saucepan over medium heat until the mixture is warm, then remove from heat.
  5. Once the soba noodles are cooked, drain them and rinse under cold water to stop the cooking process and remove excess starch.
  6. Divide the soba noodles into two bowls.
  7. Pour the warm dipping sauce into two small bowls for serving.
  8. Garnish the soba with finely chopped scallions, strips of nori, and toasted sesame seeds.
  9. Serve with a small amount of wasabi on the side, if desired.
