- Nori seaweed - 1 sheet, cut into strips
- Sesame seeds - 1 tablespoon, toasted
Steps
- Bring 1 liter of water to a boil in a pot.
- Add 150 grams of soba noodles to the boiling water and cook according to package instructions (usually about 5-6 minutes).
- While the noodles are cooking, prepare the dipping sauce by combining 60 ml of soy sauce, 30 ml of mirin, and 240 ml of dashi stock in a small saucepan.
- Heat the saucepan over medium heat until the mixture is warm, then remove from heat.
- Once the soba noodles are cooked, drain them and rinse under cold water to stop the cooking process and remove excess starch.
- Divide the soba noodles into two bowls.
- Pour the warm dipping sauce into two small bowls for serving.
- Garnish the soba with finely chopped scallions, strips of nori, and toasted sesame seeds.
- Serve with a small amount of wasabi on the side, if desired.
