Ingredients

  • Soba noodles - 150 grams
  • Daikon radish - 100 grams, peeled and julienned
  • Carrot - 50 grams, peeled and julienned
  • Green onion - 2 stalks, finely chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Water - for boiling

Steps

  1. Bring a pot of water to a boil and add the soba noodles. Cook according to package instructions, usually about 4-6 minutes, until al dente.
  2. While the noodles are cooking, prepare the dressing by mixing soy sauce, sesame oil, rice vinegar, and a pinch of salt in a small bowl.
  3. Once the noodles are cooked, drain them and rinse under cold water to stop the cooking process and cool the noodles.
  4. In a large mixing bowl, combine the cooled soba noodles, julienned daikon, carrot, and chopped green onion.
