- Soba noodles - 150 grams
- Carrots - 2 medium (approx. 200 grams)
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.
- While the noodles are cooking, peel and julienne the carrots into thin strips.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the julienned carrots to the skillet and stir-fry for 3-4 minutes until they are tender but still crisp.
- Pour in the soy sauce and stir to combine, cooking for an additional 1-2 minutes.
- Add the cooked soba noodles to the skillet, tossing everything together to coat the noodles in the sauce. Season with salt and black pepper to taste.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
