Ingredients

  • Soba noodles - 150 grams
  • Carrots - 2 medium (approx. 200 grams)
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process.
  2. While the noodles are cooking, peel and julienne the carrots into thin strips.
  3. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  4. Add the julienned carrots to the skillet and stir-fry for 3-4 minutes until they are tender but still crisp.
  5. Pour in the soy sauce and stir to combine, cooking for an additional 1-2 minutes.
  6. Add the cooked soba noodles to the skillet, tossing everything together to coat the noodles in the sauce. Season with salt and black pepper to taste.
  7. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
