Ingredients

  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Dashi stock - 240 ml
  • Sugar - 1 tablespoon
  • Soba noodles - 150 grams
  • Green onions - 2, finely sliced
  • Nori - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. In a small saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
  2. Once the mixture is simmering, reduce the heat to low and let it cook for about 5 minutes to allow the flavors to meld. Remove from heat and set aside.
  3. Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes, until al dente.
  4. Drain the soba noodles and rinse them briefly under cold water to stop the cooking process and remove excess starch.
  5. Divide the soba noodles between two bowls. Pour the prepared Tsuyu sauce over the noodles and garnish with sliced green onions, nori strips, and toasted sesame seeds.
  6. Serve immediately, allowing each person to dip their noodles into the Tsuyu sauce.
