Ingredients
- Soy sauce - 60 ml
- Mirin - 30 ml
- Dashi stock - 240 ml
- Sugar - 1 tablespoon
- Soba noodles - 150 grams
- Green onions - 2, finely sliced
- Nori - 1 sheet, cut into strips
- Sesame seeds - 1 tablespoon, toasted
Steps
- In a small saucepan, combine the soy sauce, mirin, dashi stock, and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
- Once the mixture is simmering, reduce the heat to low and let it cook for about 5 minutes to allow the flavors to meld. Remove from heat and set aside.
- Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-5 minutes, until al dente.
- Drain the soba noodles and rinse them briefly under cold water to stop the cooking process and remove excess starch.
- Divide the soba noodles between two bowls. Pour the prepared Tsuyu sauce over the noodles and garnish with sliced green onions, nori strips, and toasted sesame seeds.
- Serve immediately, allowing each person to dip their noodles into the Tsuyu sauce.
