- Soba noodles - 150 grams
- Soy sauce (Halal) - 30 ml
- Mirin (Halal) - 15 ml
- Sesame oil - 10 ml
- Fresh ginger, grated - 1 teaspoon
- Garlic, minced - 1 clove
- Carrot, julienned - 50 grams
- Cucumber, julienned - 50 grams
- Spring onions, chopped - 2
- Toasted sesame seeds - 1 tablespoon
- Fresh cilantro, chopped - 1 tablespoon
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes.
- While the noodles are cooking, prepare the sauce by mixing the soy sauce, mirin, sesame oil, grated ginger, and minced garlic in a small bowl.
- Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooked soba noodles with the julienned carrot, cucumber, and chopped spring onions.
- Pour the prepared sauce over the noodle mixture and toss gently to combine.
- Serve the soba noodles in bowls, garnishing with toasted sesame seeds and fresh cilantro.
