Ingredients

  • Soba noodles - 150 grams
  • Soy sauce (Halal) - 30 ml
  • Mirin (Halal) - 15 ml
  • Sesame oil - 10 ml
  • Fresh ginger, grated - 1 teaspoon
  • Garlic, minced - 1 clove
  • Carrot, julienned - 50 grams
  • Cucumber, julienned - 50 grams
  • Spring onions, chopped - 2
  • Toasted sesame seeds - 1 tablespoon
  • Fresh cilantro, chopped - 1 tablespoon

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-6 minutes.
  2. While the noodles are cooking, prepare the sauce by mixing the soy sauce, mirin, sesame oil, grated ginger, and minced garlic in a small bowl.
  3. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  4. In a large mixing bowl, combine the cooked soba noodles with the julienned carrot, cucumber, and chopped spring onions.
  5. Pour the prepared sauce over the noodle mixture and toss gently to combine.
  6. Serve the soba noodles in bowls, garnishing with toasted sesame seeds and fresh cilantro.
