Ingredients

  • soba noodles - 100 grams
  • silken tofu - 150 grams
  • honey - 30 grams
  • matcha powder - 10 grams
  • almond flour - 30 grams
  • eggs - 2 large
  • vanilla extract - 5 ml
  • baking powder - 5 grams
  • coconut oil - 15 grams
  • water - 200 ml

Steps

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a blender, combine the silken tofu, honey, eggs, vanilla extract, and cooked soba noodles. Blend until smooth.
  3. In a mixing bowl, combine almond flour, baking powder, and matcha powder.
  4. Pour the blended mixture into the dry ingredients and mix until fully incorporated.
  5. Preheat your oven to 180°C (350°F) and grease a small cake pan with coconut oil.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted comes out clean.
