Ingredients
- Soba noodles - 100 grams
- Ground grass-fed beef - 250 grams
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Coconut aminos - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 1 tablespoon (for cooking)
- Lettuce leaves - 2 large (for wrapping)
- Avocado - 1 medium, sliced
- Pickled ginger - to taste (for garnish)
Steps
- Cook the soba noodles according to package instructions, then drain and rinse under cold water to stop cooking. Set aside.
- In a mixing bowl, combine the ground beef, egg, chopped green onion, minced garlic, grated ginger, coconut aminos, salt, and black pepper. Mix until well combined.
- Divide the beef mixture into 2 equal portions and shape them into burger patties.
- In a skillet, heat coconut oil over medium heat. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.
- While the burgers are cooking, take the cooled soba noodles and form them into two circular patties, about the same size as the burger patties.
- Once the burgers are cooked, carefully place a soba noodle patty on top of each burger patty and press down gently to adhere.
- Remove the burgers from the skillet and let them rest for a couple of minutes.
- To serve, wrap each burger with a large lettuce leaf, add sliced avocado on top, and garnish with pickled ginger.
