Ingredients

  • Soba noodles - 150g
  • Bitter melon (goya) - 100g, thinly sliced
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Miso paste - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually around 4-5 minutes. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced bitter melon to the skillet and cook for 3-4 minutes, stirring occasionally, until slightly softened.
  4. In a small bowl, mix the miso paste with coconut aminos and a tablespoon of water to create a smooth sauce.
  5. Add the cooked soba noodles to the skillet with the bitter melon. Pour the miso sauce over the noodles and toss everything together well to combine.
  6. Drizzle with sesame oil, and mix in the chopped green onions. Cook for another 2 minutes to heat through.
  7. Serve hot, garnished with toasted sesame seeds.
