- Soba noodles - 150g
- Bitter melon (goya) - 100g, thinly sliced
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Miso paste - 2 tablespoons
- Coconut aminos - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon, toasted
Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually around 4-5 minutes. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the sliced bitter melon to the skillet and cook for 3-4 minutes, stirring occasionally, until slightly softened.
- In a small bowl, mix the miso paste with coconut aminos and a tablespoon of water to create a smooth sauce.
- Add the cooked soba noodles to the skillet with the bitter melon. Pour the miso sauce over the noodles and toss everything together well to combine.
- Drizzle with sesame oil, and mix in the chopped green onions. Cook for another 2 minutes to heat through.
- Serve hot, garnished with toasted sesame seeds.
