Ingredients

  • Coconut oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Coconut aminos - 2 tablespoons
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 4-5 minutes. Drain and set aside.
  2. In a large skillet, heat the coconut oil over medium heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced bitter melon and diced eggplant to the skillet. Sauté for 5-7 minutes until they are tender and slightly caramelized.
  4. Stir in the cooked soba noodles and coconut aminos. Toss everything together for another 2-3 minutes until well combined and heated through.
