Steps

  1. Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and rinse under cold water to stop cooking.
  2. While the noodles are cooking, slice the eggplant into thin rounds or half-moons. Sprinkle with a little salt and let sit for about 10 minutes to draw out moisture.
