Ingredients
- Soba noodles - 150 grams
- Eggplant - 1 medium (about 250 grams)
- Miso paste - 2 tablespoons
- Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, chopped
- Water - 500 milliliters
- Sesame seeds - 1 tablespoon, for garnish
Steps
- Bring a pot of water to a boil. Add the soba noodles and cook according to package instructions until al dente, usually about 4-5 minutes. Drain and rinse under cold water to stop cooking.
- While the noodles are cooking, slice the eggplant into thin rounds or half-moons. Sprinkle with a little salt and let sit for about 10 minutes to draw out moisture.
- In a skillet, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Rinse the eggplant slices and pat dry. Add them to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are tender and slightly browned.
- In a small bowl, mix together the miso paste and soy sauce (or coconut aminos) with a splash of water to create a smooth sauce.
- Add the miso sauce to the skillet with the eggplant, stirring well to coat. Cook for another 2-3 minutes until everything is heated through.
- Serve the eggplant miso mixture over the cooked soba noodles. Garnish with chopped green onions and sesame seeds.
