Steps

  1. Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 5-7 minutes. Drain and set aside.
  2. While the noodles are cooking, wash the bitter melon, slice it in half lengthwise, and scoop out the seeds. Cut into thin half-moon slices.
