Steps
- Bring a pot of water to a boil and cook the soba noodles according to package instructions, usually about 5-7 minutes. Drain and set aside.
- While the noodles are cooking, wash the bitter melon, slice it in half lengthwise, and scoop out the seeds. Cut into thin half-moon slices.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced bitter melon to the skillet, stirring well. Sauté for about 5-7 minutes until the bitter melon is tender but still slightly crunchy.
- Add the cooked soba noodles to the skillet along with coconut aminos, sliced green onions, salt, and black pepper. Toss everything together and cook for an additional 2-3 minutes to heat through.
