Ingredients
- Short-grain Japanese rice - 150 grams
- Soba noodles - 50 grams
- Water - 350 ml
- Soy sauce - 15 ml
- Mirin - 10 ml
- Dashi stock - 200 ml
- Green onions - 2 stalks, finely chopped
- Carrot - 1 medium, julienned
- Peas (fresh or frozen) - 50 grams
- Sesame oil - 5 ml
- Salt - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
- In a pot, combine the soaked rice and 350 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- In a separate pot, cook the soba noodles according to the package instructions, usually about 4-5 minutes. Drain and rinse under cold water to stop cooking.
- Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes.
- In a pan, heat sesame oil over medium heat, then add julienned carrots and peas. Stir-fry for 3-4 minutes until tender.
- Add the cooked soba noodles to the pan with the vegetables, and pour in the soy sauce, mirin, and dashi stock. Stir well and cook for another 2 minutes.
- Fluff the cooked rice with a fork and gently fold it into the soba mixture until well combined.
- Garnish with finely chopped green onions, adjust salt to taste, and serve warm.
