Ingredients

  • Short-grain Japanese rice - 150 grams
  • Soba noodles - 50 grams
  • Water - 350 ml
  • Soy sauce - 15 ml
  • Mirin - 10 ml
  • Dashi stock - 200 ml
  • Green onions - 2 stalks, finely chopped
  • Carrot - 1 medium, julienned
  • Peas (fresh or frozen) - 50 grams
  • Sesame oil - 5 ml
  • Salt - to taste

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak for 30 minutes.
  2. In a pot, combine the soaked rice and 350 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  3. In a separate pot, cook the soba noodles according to the package instructions, usually about 4-5 minutes. Drain and rinse under cold water to stop cooking.
  4. Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes.
  5. In a pan, heat sesame oil over medium heat, then add julienned carrots and peas. Stir-fry for 3-4 minutes until tender.
  6. Add the cooked soba noodles to the pan with the vegetables, and pour in the soy sauce, mirin, and dashi stock. Stir well and cook for another 2 minutes.
  7. Fluff the cooked rice with a fork and gently fold it into the soba mixture until well combined.
  8. Garnish with finely chopped green onions, adjust salt to taste, and serve warm.
