Ingredients
- Buckwheat soba noodles - 100 grams
- Chickpeas (cooked) - 150 grams
- Green onions - 2 stalks, finely chopped
- Carrot - 1 medium, grated
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Panko breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Miso paste - 1 tablespoon
- Vegan mayonnaise - 2 tablespoons
Steps
- Cook the soba noodles according to the package instructions, then drain and rinse under cold water.
- In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth.
- Add the cooked soba noodles, chopped green onions, grated carrot, minced garlic, grated ginger, soy sauce, sesame oil, panko breadcrumbs, salt, and black pepper to the bowl. Mix until well combined.
- Form the mixture into two equal patties and set aside.
- Heat a non-stick skillet over medium heat and add a splash of sesame oil. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, mix the miso paste with the vegan mayonnaise in a small bowl to create the miso mayo.
- To assemble the burgers, spread the miso mayo on the bottom half of each bun, add a lettuce leaf, place the soba patty on top, and layer with sliced tomato and cucumber. Finish with the top half of the bun.
