Ingredients

  • Soba noodles - 100g
  • Chicken breast - 150g
  • Carrot - 1 medium, julienned
  • Cucumber - 1 medium, thinly sliced
  • Sesame oil - 2 tablespoons
  • Tamari sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Bring a pot of water to boil and cook the soba noodles according to package instructions (usually about 4-5 minutes).
  2. While the noodles are cooking, heat a skillet over medium heat and add 1 tablespoon of sesame oil.
  3. Cut the chicken breast into thin strips and add to the skillet, cooking until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together tamari sauce, rice vinegar, and remaining sesame oil to create the dressing.
  5. Once the noodles are cooked, drain and rinse them under cold water to stop the cooking process.
  6. In a large mixing bowl, combine the soba noodles, cooked chicken, carrots, cucumber, and dressing, then toss well to coat.
