Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 4 grams
  • Fresh mozzarella cheese - 150 grams
  • Ripe tomatoes - 150 grams
  • Fresh basil leaves - 10 grams
  • Shoyu (soy sauce) - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 20 minutes or until doubled in size.
  5. Preheat your oven to 250°C (482°F) and place a pizza stone or baking sheet inside to heat.
  6. While the dough is rising, slice the ripe tomatoes and fresh mozzarella cheese. Set aside.
  7. Once the dough has risen, punch it down and roll it out on a floured surface to about 25 cm in diameter.
  8. Transfer the rolled-out dough to a piece of parchment paper for easy handling.
  9. Spread the sliced tomatoes evenly over the dough, followed by the mozzarella slices.
  10. Sprinkle black pepper on top and drizzle with shoyu.
  11. Carefully transfer the pizza (with the parchment paper) to the preheated pizza stone or baking sheet.
  12. Bake for 8-10 minutes or until the crust is golden and the cheese is bubbly.
  13. Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
