Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 4 grams
- Fresh mozzarella cheese - 150 grams
- Ripe tomatoes - 150 grams
- Fresh basil leaves - 10 grams
- Shoyu (soy sauce) - 1 tablespoon
- Black pepper - to taste
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 20 minutes or until doubled in size.
- Preheat your oven to 250°C (482°F) and place a pizza stone or baking sheet inside to heat.
- While the dough is rising, slice the ripe tomatoes and fresh mozzarella cheese. Set aside.
- Once the dough has risen, punch it down and roll it out on a floured surface to about 25 cm in diameter.
- Transfer the rolled-out dough to a piece of parchment paper for easy handling.
- Spread the sliced tomatoes evenly over the dough, followed by the mozzarella slices.
- Sprinkle black pepper on top and drizzle with shoyu.
- Carefully transfer the pizza (with the parchment paper) to the preheated pizza stone or baking sheet.
- Bake for 8-10 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven, garnish with fresh basil leaves, slice, and serve hot.
