Ingredients

  • Fresh shiso leaves - 30 grams
  • Soy sauce - 30 ml
  • Mirin - 15 ml
  • Sugar - 10 grams
  • Sesame oil - 5 ml
  • Dashi stock (vegetarian) - 50 ml
  • Chili flakes (optional) - 1 pinch

Steps

  1. Wash the shiso leaves thoroughly under cold water and pat them dry with a paper towel.
  2. Stack the shiso leaves, roll them tightly, and slice them into thin strips (shredding).
  3. In a small saucepan, combine the soy sauce, mirin, sugar, sesame oil, and dashi stock, and bring the mixture to a simmer over medium heat.
  4. Add the sliced shiso leaves to the saucepan and stir gently to combine.
  5. Let the mixture simmer for about 10 minutes, stirring occasionally, until the shiso leaves have wilted and the sauce has thickened slightly.
  6. If desired, add a pinch of chili flakes for a bit of heat and stir to incorporate.
  7. Remove from heat and allow to cool slightly before serving. This dish can be served warm or at room temperature.
