Ingredients

  • Japanese short-grain rice - 1 cup (200g)
  • Water - 1 1/4 cups (300ml)
  • Fresh shiso leaves - 10 leaves
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Toasted sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, combine the soaked rice and 1 1/4 cups of water, bring it to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.
  3. While the rice is cooking, finely chop the shiso leaves and set aside.
  4. Once the rice is cooked, remove it from heat and let it sit covered for an additional 10 minutes.
  5. Fluff the rice with a fork, then gently mix in the chopped shiso leaves, sesame oil, soy sauce, mirin, and salt to taste.
  6. Serve the Shiso Leaf Rice warm, garnished with toasted sesame seeds.
