Ingredients

  • Shirataki udon noodles - 200 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Rinse the shirataki udon noodles under cold water for 2-3 minutes to remove the odor.
  2. In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
  3. Add sliced mushrooms, carrots, and bell peppers to the skillet. Stir-fry for about 5 minutes until they begin to soften.
  4. Add the rinsed shirataki udon noodles to the skillet along with soy sauce and mirin. Toss everything together and cook for an additional 3-4 minutes until heated through.
  5. Stir in the spinach and cook until wilted, about 2 minutes.
  6. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
