- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, sliced
- Mushrooms - 100 grams, sliced
- Spinach - 100 grams
- Sesame seeds - 1 tablespoon for garnish
Steps
- Rinse the shirataki udon noodles under cold water for 2-3 minutes to remove the odor.
- In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
- Add sliced mushrooms, carrots, and bell peppers to the skillet. Stir-fry for about 5 minutes until they begin to soften.
- Add the rinsed shirataki udon noodles to the skillet along with soy sauce and mirin. Toss everything together and cook for an additional 3-4 minutes until heated through.
- Stir in the spinach and cook until wilted, about 2 minutes.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
