Ingredients

  • Nori seaweed - 2 sheets, torn into small pieces
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Shichimi togarashi (Japanese seven spice) - to taste

Steps

  1. Rinse the shirataki noodles under running water for about 2 minutes to remove any odor, then drain well.
  2. In a saucepan, bring the dashi stock to a gentle boil.
  3. Add the soy sauce and mirin to the dashi stock, stirring well to combine.
  4. Add the rinsed shirataki noodles to the saucepan and simmer for 5 minutes to heat through and absorb the flavors.
  5. Taste the broth and adjust the salt if necessary.
  6. Serve the shirataki noodles and broth in bowls, topped with chopped green onion, torn nori, and toasted sesame seeds.
