Steps
- In a medium pot, bring the vegetable dashi stock to a gentle simmer over medium heat.
- Add the grated daikon radish and julienned carrot to the pot and cook for about 5 minutes until tender.
- Reduce the heat to low and whisk in the miso paste until fully dissolved.
- Add the silken tofu, breaking it into small pieces gently, and cook for another 3-4 minutes to heat through.
- Stir in the spinach and green onions, cooking for an additional 2 minutes until the spinach wilts.
