Ingredients

  • Silken tofu - 150 grams
  • Miso paste - 2 tablespoons
  • Dashi stock (vegetable) - 500 ml
  • Spinach - 100 grams
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, grated
  • Green onions - 2, sliced
  • Sesame oil - 1 teaspoon
  • Soy sauce - 1 teaspoon
  • Salt - to taste

Steps

  1. In a medium pot, bring the vegetable dashi stock to a gentle simmer over medium heat.
  2. Add the grated daikon radish and julienned carrot to the pot and cook for about 5 minutes until tender.
  3. Reduce the heat to low and whisk in the miso paste until fully dissolved.
  4. Add the silken tofu, breaking it into small pieces gently, and cook for another 3-4 minutes to heat through.
  5. Stir in the spinach and green onions, cooking for an additional 2 minutes until the spinach wilts.
  6. Finish by adding soy sauce and sesame oil, then season with salt to taste.
  7. Serve hot in bowls, garnished with additional green onions if desired.
